There are two botanical types characterized by the color of their fibers: a red variety (anthocyanin dye) and a green or white variety. This last variety is mainly grown for its leaves used as acid spinach. The bissap is produced from red and fleshy calyxes of the anthocyanin variety. These calyxes 3 to 4 cm long surround a fruit; a capsule that contains seeds.
